I am not a morning person. This is no secret in my family. Thankfully my kids have been trained well enough that all I have to do is say goodbye to them. So how in the world do my kids get a decent breakfast you may ask? Onthe weekends I make a huge batch of something that will last the week for all 4, and many times even me. This quick recipe is one of those that feeds my need for protein and gives my kids something yummy to put in their belly. Best of all, it’s quick and the only thing dirty is a griddle and your blender.
2 cups of rolled oats (not instant or quick)
2 cups of cottage cheese
1T vanilla extract
Put all of this in your blender and blend until smooth. Commence pancake making.
*A note about flavor: Be creative! I usually put in random spices from the cabinet and am known to not measure.
It really is this quick! I am not a fan of cottage cheese, but you can’t taste it. Promise! They do come out a little dense, but nonetheless delish (and no sugar)!
