Fall hit us hard today! All I wanted to do was drink coffee and tea all day with some soup for dinner. Unfortunantely my hubby (our dinner chef) has been putting in overtime and we had a meeting about the town’s new school buildings. I had to scarf down a clean-out-the-fridge-dinner. While waiting for the meeting to start, hubby informed me he will in fact be transfering to a new department with training starting Monday. This means for the next 8 weeks he won’t be home until dinner time. What does that mean in our home? CROCKPOT to the rescue! Trust me, I can bake but cooking isn’t my thing.
Hubby requested I find some crockpot ideas. See, my hubby does his own flavoring and can’t for the life of him follow a recipe. These will be our dinner ideas for this week.

I am constantly trying to convince hubby to include more legumes for dinner. Amazingly my kids adore lentils and I think this recipe could be a hit with all.
Last but not least a family favorite my mother-in-law introduced to us. This type of soup is always a hit in our house, especially because it involves chips.
